Pressure cooking does require some adjustments, however. Follow these tips for the best pressure-cooking results:</p>\n<ul class=\"level-one\">\n<li>\n<p class=\"first-para\"><b>Brown meats, poultry, and even some vegetables — like chopped onions, peppers, or carrots — first and then deglaze the pot for more intense flavor. </b>In a stove-top pressure cooker, simply add a small amount of oil, such as olive or canola oil, to the pressure cooker and heat, uncovered, over medium-high heat. Add the food in small batches and brown the food on all sides. Remove the food to a bowl and set aside. You’re now going to loosen up and remove those delicious, cooked-on juices and tiny food particles left behind by deglazing the pot with a small amount of wine, broth, or even water. Return the cooked food previously removed from the pot along with the remaining ingredients and cook under pressure. For an electric cooker, follow the same steps just described, selecting the Brown setting.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Don’t overdo the liquid.</b> Because food cooks in a closed, sealed pot when cooking under pressure, you have less evaporation and should therefore use less cooking liquid than when cooking in a conventional pot. Regardless of what you’re cooking, however, always use enough liquid. A good rule of thumb is at least 1 cup of liquid; however, check the owner’s manual or recipe booklet to see exactly what the pressure-cooker manufacturer recommends. Never fill the pot more than halfway with liquid.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Don’t fill any pressure cooker with too much food.</b> Never fill a pressure cooker more than two-thirds full with food. Also, never pack food tightly into a pressure cooker. If you don’t follow these basic rules for cooking under pressure, the pressure cooker won’t operate efficiently, affecting how the food comes out. You may also cause the safety valves to activate, especially if there’s too much food in the pot.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Remember that even pieces mean evenly cooked food.</b> Food should be cut into uniform-sized pieces so that they cook in the same amount of time.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Use stop-and-go cooking for perfect results.</b> When making a recipe that contains ingredients that cook at different times, begin by partially cooking slow-to-cook foods, such as meat, first. Then use a quick-release method to stop the pressure cooker. Next, add the faster-cooking ingredients — such as green beans or peas — to the meat. Bring the pot back up to pressure again and finish everything up together at the same time.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Start off high and finish up low.</b> When cooking in a stove-top pressure cooker, start cooking over high heat. After you reach pressure, lower the burner to a simmer. No need to worry about adjusting the heat when cooking in an electric pressure cooker. The appliance does it for you automatically.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Play burner hopscotch to avoid burning when cooking in a stovetop pressure cooker.</b> When you reach pressure over high heat, you lower the burner to a simmer. Gas burners react quickly, but most electric burners don’t. If you have an electric stove, use two burners: one on high heat to reach pressure and a second set on a low setting to maintain pressure. Switch the pressure cooker over to the burner with the low setting when you reach pressure.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Set a timer.</b> Have a kitchen timer handy so that after the pressure cooker reaches and maintains pressure, you can set it for the cooking time specified in the recipe. Note that electric pressure cookers have their own digital timers built in.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Use an electric pressure cooker if you want to do pressure cooking the super-easy way.</b> Choose the desired pressure level by pressing either the high or low pressure button on the control panel. Then, set the desired time you want to cook under pressure by pressing the high or low button for increasing or decreasing cook time. Now, press Start. The pressure cooker starts the countdown time when the level of pressure you chose is reached. It then beeps when done, telling you your food is ready.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Bear in mind that high altitude means longer cooking times.</b> You may have to increase the cooking times if you live at an elevation of 3,000 feet above sea level or higher. A good general rule is to increase the cooking time by 5 percent for every 1,000 feet you are above the first 2,000 feet above sea level.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Release that pressure.</b> When the food is done cooking under pressure, use an appropriate pressure-release method, according to the recipe you’re making.</p>\n<p class=\"first-para\">Be sure never to attempt a cold-water release with your electric pressure cooker — unless you want to shorten its lifespan or your own! Here are the grains you need to avoid on a gluten-free diet:</p>\n<ul class=\"level-one\">\n<li>\n<p class=\"first-para\"><b>Wheat </b>and most things with the word <i>wheat</i> in its name. You also need to avoid hydrolyzed wheat protein, wheat starch, wheat germ, and so on, but you may not realize that you need to beware of aliases like <i>flour, bulgur, semolina, spelt, frumento, durum </i>(also spelled <i>duram</i>), <i>kamut, graham, einkorn, farina, couscous, seitan, matzoh, matzah, matzo, </i>and <i>cake flour.</i></p>\n<p class=\"child-para\">By the way, wheat grass, like all grasses, is gluten-free, as is buckwheat.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Wheat starch</b> is wheat that’s had the gluten washed out. In some countries, a special type of wheat starch called Codex Alimentarius wheat starch is allowed on the gluten-free diet — but standards vary from country to country. Codex Alimentarius wheat starch isn’t allowed in North America because some people question whether the washing process completely removes all residual gluten.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Barley </b>and its derivatives. Most malt is derived from barley, so unless it states otherwise, you need to avoid malt and malt flavoring as well as barley in its pure form.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Triticale,</b> which most people have never heard of, is a hybrid cross between wheat and rye. It was developed to combine the productivity of wheat with the ruggedness of rye.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Rye </b>isn’t really hidden in many foods, so the pure form of rye — usually found in rye bread — is what you need to avoid.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Derivatives of gluten-containing grains. </b>If you thought you were done with derivatives when you finished your calculus class, you were wrong. You need to avoid derivatives of gluten-containing grains, and the most common one to watch out for is <b>malt,</b> which usually comes from barley. Malt, malt flavoring, and malt vinegar are definite no-nos. If malt is derived from another source, such as corn, it will usually say so on the label; for instance, “malt (from corn).” That’s not too common, though, so if the source isn’t specified, don’t eat it.</p>\n</li>\n</ul>\n"},{"title":"Foods to avoid on a gluten-free diet","thumb":null,"image":null,"content":"<p>Gluten hides in some places you may not thing of. Not only are smaller, specialty breweries making them, but even the big boys like Budweiser have come out with a gluten-free beer that you can buy just about anywhere beer is sold.</p>\n</li>\n<li>\n<p class=\"first-para\">Bread, bread crumbs, biscuits</p>\n</li>\n<li>\n<p class=\"first-para\">Cereal</p>\n</li>\n<li>\n<p class=\"first-para\">Cookies, cakes, cupcakes, doughnuts, muffins, pastries, pie crusts, brownies, and other baked goods</p>\n</li>\n<li>\n<p class=\"first-para\">Cornbread</p>\n</li>\n<li>\n<p class=\"first-para\">Crackers</p>\n</li>\n<li>\n<p class=\"first-para\">Croutons</p>\n</li>\n<li>\n<p class=\"first-para\">Gravies, sauces, and roux</p>\n</li>\n<li>\n<p class=\"first-para\">Imitation seafood (for example, imitation crab)</p>\n</li>\n<li>\n<p class=\"first-para\">Licorice</p>\n</li>\n<li>\n<p class=\"first-para\">Marinades (such as teriyaki)</p>\n</li>\n<li>\n<p class=\"first-para\">Pasta</p>\n</li>\n<li>\n<p class=\"first-para\">Pizza crust</p>\n</li>\n<li>\n<p class=\"first-para\">Pretzels</p>\n</li>\n<li>\n<p class=\"first-para\">Soy sauce</p>\n</li>\n<li>\n<p class=\"first-para\">Stuffing</p>\n</li>\n</ul>\n"},{"title":"Basic ingredients for the gluten-free kitchen","thumb":null,"image":null,"content":"<p>When compiling the ingredients for your gluten-free kitchen, you want to make sure you don’t accidentally introduce an item with gluten. If you do, you have the chance of contaminating your entire pantry. Here’s a quick list of basic ingredients you might want to keep in your pantry:</p>\n<ul class=\"level-one\">\n<li>\n<p class=\"first-para\">All the gluten-free flours</p>\n</li>\n<li>\n<p class=\"first-para\">Xanthan gum</p>\n</li>\n<li>\n<p class=\"first-para\">Guar gum</p>\n</li>\n<li>\n<p class=\"first-para\">A premixed batch of my baking mix</p>\n</li>\n<li>\n<p class=\"first-para\">Quinoa (a personal favorite — great to toss into soups and other foods)</p>\n</li>\n<li>\n<p class=\"first-para\">Rice (brown rice is best)</p>\n</li>\n<li>\n<p class=\"first-para\">Gluten-free bread crumbs (which can be ordered online)</p>\n</li>\n<li>\n<p class=\"first-para\">Gluten-free crackers (which you can crumble and use as coatings on foods, fillers in meatloaf, and in soups and salads)</p>\n</li>\n<li>\n<p class=\"first-para\">Gluten-free snacks (important to have on-hand for kids)</p>\n</li>\n</ul>\n"},{"title":"Finding gluten-free substitutions","thumb":null,"image":null,"content":"<p>Just because you’re living a gluten-free lifestyle doesn’t mean you have to sacrifice good food. You can still make your favorite recipes in many ways by just substituting gluten-free ingredients for the gluten-containing ingredients. Here are some savvy substitutions for some of your favorite ingredients.</p>\n<ul class=\"level-one\">\n<li>\n<p class=\"first-para\"><i></i><b>Flour:<i> </i></b>If your recipe calls for flour, consider using cornstarch or a gluten-free flour or mix. Experiment with the many new flours available, like bean flours, sorghum, and amaranth. They’re nutritious and add flavor, and oh yeah — they’re gluten-free!</p>\n</li>\n<li>\n<p class=\"first-para\"><i></i><b>Breading and coatings:<i> </i></b>If a recipe calls for breading, bread crumbs, flour coating, or a similar preparation, consider using a wheat- or gluten-free mix (either homemade or store bought). Bread and muffin mixes work well for coatings on chicken and other fried goodies. Seasoned cornmeal or corn flour (masa) and crushed potato chips (my favorite chips for coatings are barbecued flavor) are also excellent alternatives.</p>\n</li>\n<li>\n<p class=\"first-para\"><i></i><b>Thickeners:</b> Cornstarch, arrowroot flour, and tapioca starch make great substitutes for flour and other thickeners. Dry pudding mix works well for sweet recipes, and bread or baking mixes work well for just about anything.</p>\n</li>\n<li>\n<p class=\"first-para\"><i></i><b>Binders:</b> Consider using gelatin, xanthan gum, or guar gum.</p>\n</li>\n<li>\n<p class=\"first-para\"><i></i><b>Pie crust: </b>People think that if something calls for a pie crust — say a quiche or a pie — then it’s off limits unless they make a really complicated crust from a really complicated recipe. Think again! First, consider making the dish <i>without</i> the crust. Seriously — a quiche without a crust is still a quiche. And admit it — when you eat a pie, you just eat the crust to be polite, right? The crust is really just a means to get to the gushy stuff inside. Okay, if you really want to make a gluten-free crust without a schmancy recipe,<i> </i>crush a couple of handfuls of gluten-free cookies or a sugary gluten-free cereal, add some butter or margarine (a glob or a dopple, whichever you prefer), and press the stuff into a greased pie pan. Then follow the baking instructions for a regular pie. You’ll probably just eat the good stuff out of the middle, anyway.</p>\n</li>\n<li>\n<p class=\"first-para\"><i></i><b>Bread crumbs:</b> Some gluten-free breads turn to crumbs when you look at them. And certainly, there are always plenty of crumbs in the bag; just use them as extras for cooking. Or crumble some bread slices, and toast or broil the crumbs to make them crunchy.</p>\n</li>\n<li>\n<p class=\"first-para\"><i></i><b>Croutons:</b><i> </i>Cut fresh, gluten-free bread into cubes, deep fry or pan fry, and then roll in Parmesan cheese and spices. Some people suggest letting the bread get just a tad stale (not moldy) before making croutons this way.</p>\n</li>\n<li>\n<p class=\"first-para\"><i></i><b>Granola:</b><i> </i>If you can find gluten-free oats, you’re set. But if you can’t, you can still make granola. Toss together toasted nuts and seeds, and then mix them with gluten-free cereal, honey, vanilla, a tiny bit of oil, and spices or seasonings. How much spices and seasonings? A smidge or so, till it tastes like you like it. Bake at 300 degrees for an hour, stirring every 15 minutes. Add dried fruit (that’s been soaked in water for 10 minutes), let cool, then refrigerate or vacuum seal and freeze.</p>\n</li>\n<li>\n<p class=\"first-para\"><i></i><b>Trail mix:<i> </i></b>Lots of trail mixes that are available at the stores are already gluten-free, but if you like to make your own, mix some peanuts, raisins, dried fruit, and gluten-free chocolate candies or chips. If you do buy store-bought trail mix, beware of prepared trail-mix dates, which are often rolled in oat flour (and therefore not gluten-free).</p>\n</li>\n<li>\n<p class=\"first-para\"><i></i><b>Oatmeal/hot breakfast:</b><i> </i>Try corn grits. Prepare them like oatmeal and top with butter, cinnamon, and sugar, or fry them. Hot cereals are also available from the producers of gluten-free flours. Some new amaranth and quinoa hot cereals also are available that are nutritional powerhouses.</p>\n</li>\n<li>\n<p class=\"first-para\"><i></i><b>Buns and flour tortillas:</b> Substitute lettuce, gluten-free bread, corn tortillas, or rice wraps (found in Asian markets and often used in Thai cooking). If you like <i>nori</i> (the seaweed wrap on sushi), you can use it as a wrap with anything stuffed inside.</p>\n</li>\n<li>\n<p class=\"first-para\"><b><i></i>Soy and teriyaki sauce:<i> </i></b>Asian markets carry some absolutely amazing Asian sauces that are gluten-free, but you have to read labels carefully (and sometimes that requires a crash course in another language). A few of the large soy-sauce manufacturers are starting to make wheat-free (usually gluten-free) versions that are widely available, too. If you can’t find a gluten-free soy sauce, you can substitute Bragg Liquid Aminos. You can find Bragg in the health-food aisle of your grocery store or at a natural-foods retailer. To make your own teriyaki, add equal parts of sugar and wine to your favorite soy-sauce substitute.</p>\n</li>\n</ul>\n<p><b><i>Remember: </i></b>When in doubt, leave it out. And really, what’s the harm in leaving it out, anyway? The method is called the Rule of 15 because you treat lows with approximately 15 grams of fast-acting carbohydrate (such as glucose tablets or gels, fruit juice, or regular soda) and then retest your blood glucose after 15 minutes. Before using this method, ask your doctor to make sure it&#8217;s right for you. And that means the child becomes confused, sleepy, and even comatose.</p>\n<p>Some symptoms of hypoglycemia are:</p>\n<ul class=\"level-one\">\n<li>\n<p class=\"first-para\">Whiteness or pallor of the skin</p>\n</li>\n<li>\n<p class=\"first-para\">Sweating</p>\n</li>\n<li>\n<p class=\"first-para\">Rapid heartbeat or palpitations (the sensation that the heart is beating too fast)</p>\n</li>\n<li>\n<p class=\"first-para\">Anxiety</p>\n</li>\n<li>\n<p class=\"first-para\">Irritability</p>\n</li>\n<li>\n<p class=\"first-para\">Numbness in the lips, fingers, and toes</p>\n</li>\n<li>\n<p class=\"first-para\">Sensation of hunger</p>\n</li>\n<li>\n<p class=\"first-para\">Headache</p>\n</li>\n<li>\n<p class=\"first-para\">Loss of concentration</p>\n</li>\n<li>\n<p class=\"first-para\">Vision disorders, like double or blurred vision</p>\n</li>\n<li>\n<p class=\"first-para\">Poor color vision</p>\n</li>\n<li>\n<p class=\"first-para\">Fatigue</p>\n</li>\n<li>\n<p class=\"first-para\">Difficulty hearing</p>\n</li>\n<li>\n<p class=\"first-para\">Confusion and difficulty concentrating</p>\n</li>\n<li>\n<p class=\"first-para\">Feeling of warmth</p>\n</li>\n<li>\n<p class=\"first-para\">Slurred speech</p>\n</li>\n<li>\n<p class=\"first-para\">Dizziness</p>\n</li>\n<li>\n<p class=\"first-para\">Convulsions</p>\n</li>\n<li>\n<p class=\"first-para\">Reduced consciousness or coma</p>\n</li>\n</ul>\n<p>Mild hypoglycemia is marked by a blood glucose of about 75 mg/dl, moderate hypoglycemia by a blood glucose of about 65 mg/dl, and severe hypoglycemia by a blood glucose of less than 55 mg/dl.</p>\n<p>You can prevent many episodes of hypoglycemia by constantly staying aware of your child’s blood glucose and keeping him on a regular schedule; you can adjust his insulin if he’s mildly hypoglycemic. Other tips for treating hypoglycemia include the following:</p>\n<ul class=\"level-one\">\n<li>\n<p class=\"first-para\">Giving your child glucose tablets, which contain 4 mg of glucose. Two to four tablets is enough for moderate hypoglycemia in most children. If your child has trouble swallowing, give him honey instead of glucose tablets.</p>\n</li>\n<li>\n<p class=\"first-para\">Giving your child 1-1/2 cups of orange juice. It effectively raises the blood glucose back to the normal range of 90 to 100 mg/dl.</p>\n</li>\n<li>\n<p class=\"first-para\">Keeping the child quiet and inactive for 15 to 30 minutes after the reaction.</p>\n</li>\n<li>\n<p class=\"first-para\">Checking the blood glucose 20 minutes after treating the hypoglycemia and giving another treatment if the level remains below 100 mg/dl.</p>\n</li>\n<li>\n<p class=\"first-para\">Using a prescription glucagon emergency shot for an unconscious child who has severe hypoglycemia. Just make sure that the glucagon hasn’t expired. If the child doesn’t wake up in 10 to 15 minutes even though his blood glucose is normal, call 911.</p>\n</li>\n</ul>\n"},{"title":"Taking action if diabetic ketoacidosis strikes","thumb":null,"image":null,"content":"<p><i>Diabetic ketoacidosis</i> (DKA) is a severe diabetic complication that has to be managed in a hospital. It’s characterized by high blood glucose (though it need not be very high) associated with an acid condition of the blood due to the production of ketones, which are the products of fat breakdown. The root of the illness is a lack of insulin.</p>\n<p>Without enough insulin, glucose can’t get into insulin-dependent cells like muscle and the liver, so glucose accumulates in the blood, and the body turns to fat for energy.</p>\n<p class=\"Tip\">Major symptoms include the following:</p>\n<ul class=\"level-one\">\n<li>\n<p class=\"first-para\">Abdominal pain</p>\n</li>\n<li>\n<p class=\"first-para\">Frequent urination and thirst</p>\n</li>\n<li>\n<p class=\"first-para\">Nausea and vomiting</p>\n</li>\n<li>\n<p class=\"first-para\">Weakness</p>\n</li>\n<li>\n<p class=\"first-para\">Weight loss</p>\n</li>\n<li>\n<p class=\"first-para\">Smell of acetone on the breath</p>\n</li>\n<li>\n<p class=\"first-para\">Confusion or coma</p>\n</li>\n<li>\n<p class=\"first-para\">Cold skin and body temperature</p>\n</li>\n<li>\n<p class=\"first-para\">Rapid, shallow breathing followed by deep, labored breathing</p>\n</li>\n</ul>\n<p>If you suspect that you or your child has DKA, there are a couple of quick tests you can do at home to verify the diagnosis:</p>\n<ul class=\"level-one\">\n<li>\n<p class=\"first-para\">Check the blood glucose with your home meter. With DKA, the meter will generally read greater than 250 mg/dl, but some cases of mild DKA may have a glucose reading under 250 mg/dl.</p>\n</li>\n<li>\n<p class=\"first-para\">Check the urine for ketones. If you&#8217;re in the middle of this great grill debate, don&#8217;t worry. The following list, which compares the major features of those two basic types of grills, can help you make a decision:</p>\n<ul class=\"level-one\">\n<li>\n<p class=\"first-para\"><b>Cost:</b> Gas has a much larger initial investment, from $150 up to $5,000 and more! Charcoal grills, on the other hand, fall into the $50 to $450 range.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Flavor:</b> Because taste is so subjective and personal, the debate will continue forever regarding whether charcoal or gas grilling produces superior flavor. Multitudes of taste tests have demonstrated that most people can&#8217;t tell the difference between the two. However, despite the many advances in the gas grill industry, a charcoal grill still gives a better — or at least, different — flavor than a gas grill.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Temperature capabilities:</b> Because consumers have demanded grills that can achieve the kind of searing and light char that has in the past been possible only at professional steakhouses, BTUs and heat have been increased dramatically.</p>\n<p class=\"child-para\">Charcoal grills, for example, can go above 500 degrees, so they cook food faster and sear better. The only caveat with these grills is that you must watch your food closely. A gas grill usually stays below 500 degrees, and so food takes longer to cook. However, some gas models, including those from Weber, now have embedded burners that can reach 900 degrees.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Convenience:</b> Convenience is a major factor for most people. Many folks are often pressed for time these days, particularly during the week, and use a gas grill during the week and a charcoal grill for the weekends.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Ease of lighting the grill:</b> Gas grills are a snap to light. You simply turn on the gas, push the igniter button, and adjust the control to high. Wait about 10 minutes, and you&#8217;re ready to cook.</p>\n<p class=\"child-para\">Many people would argue otherwise, but charcoal grills are <i>not</i> difficult to light. The fact is that charcoal grills are extremely easy to light and take only about 30 minutes to reach a medium stage of heat. Using a chimney starter can shave another 15 minutes off that time.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Ease of maintaining the temperature:</b> Gas grills have adjustable flame controls, so turning the heat up or down is as simple as turning a knob; they also offer a steady supply of heat. Charcoal grills, on the other hand, are more difficult to manage. They usually come with a damper control that allows you to adjust the amount of oxygen and therefore the amount of heat and fire in the grill, but adjusting the heat to your liking takes more attention than a simple turn of a knob.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Practicality for cold winter months:</b> Because a gas grill requires so little effort to use, you can grill with it year-round. Building a fire isn&#8217;t fun when outdoor temperatures drop, so most people are far less inclined to grill out during the off-season with a charcoal grill.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Ease of grill maintenance:</b> Gas grills are easy to clean and maintain because they don&#8217;t have the sooty build-up or the ash deposits left by a charcoal grill. You have dozens of attractive grills to choose from, whether you&#8217;re cooking with charcoal or gas. Grills come in all sorts of styles, including high-tech, contemporary, gleaming stainless steel, or wonderful bright-colored porcelain enamel. Choose from bright red, cobalt blue, or teal. Even painted gas grills come in colors like hunter green or burgundy.</p>\n</li>\n</ul>\n"},{"title":"Direct versus indirect grilling","thumb":null,"image":null,"content":"<p>If your grilling experience is limited to roasting a hot dog on a branch over an open fire when you were a kid at camp, you&#8217;ve just scratched the surface of what can be a very exciting (and somewhat intimidating) way to cook. To start your grilling journey, two key terms to know are direct and indirect — the two basic methods of grilling.</p>\n<h2>Searing food with direct, no-frills grilling</h2>\n<p><i>Direct grilling</i> means that the food is placed on the grill directly over the full force of the heat source, whether it&#8217;s charcoal, hardwood, or gas. (See the figure below.) Just about every food, from meats to vegetables, can be grilled directly over fire, including hamburgers, hot dogs, pork chops, lamb chops, boneless chicken breasts, beef tenderloins, and all types of fish and shellfish.</p>\n<p>Grilling over direct, intense heat sears the food, coating its exterior with a tasty brown crust that&#8217;s loaded with flavor. Steamed or boiled foods don&#8217;t have this flavor advantage, nor do foods that are stir-fried or microwaved. The techniques of sautéing, deep-frying, roasting, and broiling create this crusty effect, but grilling rewards you with a seared crust <i>and</i> the extra benefit of smoky flavoring that comes from the charcoal, wood chips, or hardwood chunks.</p>\n<p class=\"Warning\">The primary difficulty with direct grilling is that you must watch your food closely to prevent it from burning.</p>\n<p>On a charcoal grill, the coals should be spread in a solid layer that extends about 1 to 2 inches beyond the edges of the food. Indirect grilling has a multitude of advantages:</p>\n<ul class=\"level-one\">\n<li>\n<p class=\"first-para\"><b>It slows down the cooking process.</b> How many times have you used direct grilling to cook chicken and ended up with skin charred beyond recognition and meat that&#8217;s practically raw in the center? With indirect grilling, food is cooked in a covered grill by heat that never directly touches it, and is comparable to oven roasting.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Indirect cooking actually gives you two types of fires (or two levels of heat) in one grill.</b> You have a direct fire that can be used to sear food and an indirect fire to cook food slowly and thoroughly.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Indirect grilling eliminates the possibility of dangerous flare-ups.</b> Fat drips from the food into the drip pan, rather than onto the hot coals, lava rocks, or ceramic briquettes.</p>\n</li>\n</ul>\n<p>Indirectly grill any large cuts of meat or whole birds, poultry pieces, pork tenderloins, ribs, or large roasts for delicious results.</p>\n"},{"title":"6 top tips for grilling","thumb":null,"image":null,"content":"<p>Before you begin grilling, here are some general tips that you should always keep in mind for the sake of safety, preparation, and getting the best results.</p>\n<ul class=\"level-one\">\n<li>\n<p class=\"first-para\"><b>Practice patience with your fire.</b> Never put food on a grill that isn&#8217;t ready. Be sure to take your time getting the fire going, making sure that the coals are uniformly ashy gray. And remember that not all foods take well to the same fire or the same temperatures. Check your recipe or your grill manual to find out what temperature you need for each type of food.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Organize your grill space.</b> Set up a small table next to the grill with all your ingredients, utensils, serving platters, and so on. Grilling can proceed quickly, and so you have to be ready to serve food when it&#8217;s at its peak.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Flavor your food.</b> Grilling a hamburger, a steak, or some fish on the grill is simple and wonderful all on its own. But to add flavor to the food and seal that flavor in is the mark of a master griller. Marinating, which is a liquid flavor enhancer, adds moisture and is great for almost all foods. Oils are great for keeping delicate foods moist on the grill, and rubs help create a nice crispy crust.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Don&#8217;t skimp on fuel.</b> Be sure to build a fire that won&#8217;t lose its heat before you finish grilling. This is especially important with a charcoal grill. Even though you can always replenish your coals, it&#8217;s better to use too many than not enough. Just remember to spread the coals about 2 inches beyond the edges of the food, and if you do replenish the coals, you must wait until they turn ashen gray — usually about 20 minutes — before you get back to your ideal heat.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Police the fire!</b> A fire changes constantly and demands your attention at all times. At the beginning of the heating process, coals will glow and have a flame above them. When you add food, you&#8217;ll likely have a small to large flare-up, so monitor the cooking closely at that time. If you leave the grill with fire licking the sides of the food, you may come back to a charred meal.</p>\n<p class=\"child-para\">Later on, when the fire has died down, you want to maintain a consistent heat so the food cooks evenly. Replenishing the coals if they start to lose their glow and diminish in size is usually necessary at least once. You may need to replenish more times throughout a long cooking time.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Figure out when food is done.</b> Unfortunately, overcooked food doesn&#8217;t have a reverse gear to take it back to rare, and an overdone piece of meat is a crying shame. So be sure to hover over your grill and check the food often. To test for doneness, make a small cut in the center of the food so you can peek inside. Test frequently for doneness a few minutes before the end of the estimated cooking time. Use an instant-read thermometer for thick chops, roasts, and whole poultry.</p>\n<p class=\"child-para\">You should also gauge the searing on the outside of the food. Some folks love a black char and others prefer a light one. You also need to avoid hydrolyzed wheat protein, wheat starch, wheat germ, and so on; but you may not realize that you need to beware of wheat aliases like <i>flour</i>, <i>bulgur</i>, <i>semolina</i>, <i>spelt</i>, <i>frumento</i>, <i>durum</i> (also spelled <i>duram</i>), <i>kamut</i>, <i>graham</i>, <i>einkorn</i>, <i>farina</i>, <i>couscous</i>, <i>seitan</i>, <i>matzoh</i>, <i>matzah</i>, <i>matzo</i>, and <i>cake flour</i>.<br />\nYou should avoid buying the following items because they usually have wheat in them. Make your own unless you can find store versions that are specifically gluten-free:</p>\n<ul class=\"level-two\">\n<li>\n<p class=\"first-para\">Beer (some gluten-free versions are available)</p>\n</li>\n<li>\n<p class=\"first-para\">Bread, bread crumbs, biscuits</p>\n</li>\n<li>\n<p class=\"first-para\">Breakfast cereal</p>\n</li>\n<li>\n<p class=\"first-para\">Cornbread (the flour usually contains some wheat)</p>\n</li>\n<li>\n<p class=\"first-para\">Crackers</p>\n</li>\n<li>\n<p class=\"first-para\">Croutons</p>\n</li>\n<li>\n<p class=\"first-para\">Gravies, sauces, and roux</p>\n</li>\n<li>\n<p class=\"first-para\">Imitation seafood (such as imitation crab)</p>\n</li>\n<li>\n<p class=\"first-para\">Licorice</p>\n</li>\n<li>\n<p class=\"first-para\">Marinadese (such as teriyaki)</p>\n</li>\n<li>\n<p class=\"first-para\">Pasta</p>\n</li>\n<li>\n<p class=\"first-para\">Pizza crust</p>\n</li>\n<li>\n<p class=\"first-para\">Pretzels</p>\n</li>\n<li>\n<p class=\"first-para\">Soy Sauce</p>\n</li>\n<li>\n<p class=\"first-para\">Stuffing</p>\n</li>\n<li>\n<p class=\"first-para\">Sweet baked goods like cookies, cakes, cupcakes, doughnuts, muffins, pastries, and pie crusts</p>\n</li>\n</ul>\n</li>\n<li>\n<p class=\"first-para\"><b>Wheat starch</b> is wheat that’s had the gluten washed out, but you still have to beware. In some countries, a special type of wheat starch called <i>Codex Alimentarius</i> wheat starch is allowed on the gluten-free diet &#8212; but standards vary from country to country. Codex Alimentarius wheat starch isn’t allowed in North America because some people question whether the washing process completely removes all residual grain.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Barley</b> and its derivatives. Most malt is derived from barley, so unless it states otherwise, you need to avoid malt and malt flavoring as well as barley in its pure form.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Triticale</b>, which most people have never heard of. It’s a hybrid cross between wheat and rye, and was developed to combine the productivity of wheat with the ruggedness of rye.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Rye</b> isn’t really hidden in any ingredients, so the pure form of rye (usually found in rye bread) is what you need to avoid.</p>\n</li>\n</ul>\n"},{"title":"Important ingredients for the gluten-free kitchen","thumb":null,"image":null,"content":"<p>Here’s a quick list of basic ingredients to always keep in your pantry, to help with your gluten-free cooking and baking. Check your local grocery store or online supplier of gluten-free foods for these items:</p>\n<ul class=\"level-one\">\n<li>\n<p class=\"first-para\">Gluten-free flours.</p>\n</li>\n<li>\n<p class=\"first-para\">Xantham gum.</p>\n</li>\n<li>\n<p class=\"first-para\">Guar gum.</p>\n</li>\n<li>\n<p class=\"first-para\">A premixed batch of gluten-free baking mix.</p>\n</li>\n<li>\n<p class=\"first-para\">Quinoa (which you can toss into soups and other foods).</p>\n</li>\n<li>\n<p class=\"first-para\">Rice. Brown rice is best.</p>\n</li>\n<li>\n<p class=\"first-para\">Gluten-free bread crumbs (which can be ordered online).</p>\n</li>\n<li>\n<p class=\"first-para\">Gluten-free crackers (which you can crumble and use as coatings on foods, fillers in meatloaf, and in soups and salads).</p>\n</li>\n<li>\n<p class=\"first-para\">Gluten-free snacks (which are great to have around for kids).</p>\n</li>\n</ul>\n"},{"title":"Gluten-free food and ingredient substitutions","thumb":null,"image":null,"content":"<p>If you’re tempted to experiment with making your favorite recipes gluten-free, here are some savvy substitutions for a few of your favorite ingredients. Don&#8217;t hesitate to get creative!</p>\n<ul class=\"level-one\">\n<li>\n<p class=\"first-para\"><b>Flour:</b> If your recipe calls for flour, consider using cornstarch or a gluten-free flour or mix. Experiment with the many new flours available, like bean flours, sorghum, and amaranth. They’re nutritious and add flavor, and oh yeah, they’re gluten free!</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Breadings and coatings:</b> If a recipe calls for breading, bread crumbs, flour coating, or a similar preparation, consider using wheat- or gluten-free mix (either homemade or store bought). Bread and muffin mixes work well for coatings on chicken and other fried goodies. Seasoned cornmeal or corn flour (masa) and crushed potato chips are also excellent alternatives.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Thickeners:</b> Cornstarch, arrowroot flour, and tapioca starch make great substitutes for flour and other thickeners. Dry pudding mix works well for sweet recipes, and bread or baking mixes work well for just about anything.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Binders:</b> Consider using gelatin, xanthan gum, or guar gum.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Bread crumbs:</b> Many gluten-free breads turn to crumbs when you look at them. And certainly, there are always plenty of crumbs in the bag; just use them as extras for cooking. Or crumble some bread slices, and toast or broil the crumbs to make them crunch.</p>\n</li>\n<li>\n<p class=\"first-para\"><b>Croutons:</b> Cut fresh, gluten-free bread into cubes, deep fry, and then roll in Parmesan cheese and spices. Heat stable and perfectly portioned, silicone muffin liners allow you to bring the beauty of breads to the comfort of your own kitchen. Plus, you can even make baked eggs in them.</li>\n<li><strong>Seven-inch springform (Bundt) pan: </strong>Cheesecakes and coffee cakes have a seat at your table when you invest in one of these (usually sold as a convertible cake and Bundt cake pan). You can enjoy a bakery-fresh slice of cake for less than a fraction of the cost.</li>\n<li><strong>Seven-inch oven-safe casserole dish: </strong>Most air fryers don’t exceed 400 degrees, meaning the same small casserole dish that withstands your oven temperatures will be safe in your air fryer, too. From glass to metal to silicone, the air fryer should accommodate them all!</li>\n</ul>\n<p class=\"article-tips remember\">All air fryers are slightly different, so if you have any uncertainty, check the manual for your specific model.</p>\n<ul>\n<li><strong>Metal skewers: </strong>Take those skewers from the grill and use them in your air fryer to help evenly cook thicker cuts of meat. Depending on the type of air fryer you have, the skewers may (or may not) be too big for your fryer. If you’re on the fence about skewers that will fit your air fryer, you can use wooden sticks (just be cautious of the temperature so you don’t catch them on fire).</li>\n<li><strong>Kitchen tongs: </strong>Using a pair of kitchen tongs is essential to ensure you don’t burn another finger trying to get that last chip that’s nestled itself on the side of the fryer basket.</li>\n</ul>\n"},{"title":"5 Ways to Prevent Air Frying Your Food to a Crisp","thumb":null,"image":null,"content":"<p>When cooking certain foods at high temperatures, charring can occur. That charring produces a chemical called acrylamide. And acrylamide <em>might</em> be linked to an increased risk of cancer. It’s important to note that, according to the <a href=\"https://www.cancer.org/cancer/cancer-causes/acrylamide.html\">American Cancer Society</a>, “It’s not yet clear if the levels of acrylamide in foods raise cancer risk. . . .” Still, you can take some steps to avoid frying foods to a crisp. Here’s what we recommend:</p>\n<ul>\n<li><strong>Cook at lower temperatures for longer periods of time (instead of high temperatures for shorter periods).</strong> Turning the temperature knob down to 300 to 325 degrees and increasing the time to 10 or 20 minutes may prevent charred coffee cake and blackened fries.</li>\n<li><strong>Cover foods with foil. </strong>The air fryer works to cook your foods by circulating air throughout the basket, so you don’t want to prevent that air flow. However, you <em>can</em> use foil to cover a chicken breast, for example, and place it in the basket to cook (low and slow). We also suggest using foil to cover cakes and egg dishes to prevent the top from cooking too quickly. Just be sure there is enough room between the foil and the top of the air fryer.</li>\n<li><strong>Don’t overfill the basket. </strong>You may be tempted to throw the entire batch of beet chips or broccoli florets into the basket at once to save time, but that will result in uneven cooking and a few pieces getting burned to a crisp. Either invest in a larger fryer or cook in smaller batches to produce the perfect air-fried foods every time.</li>\n<li><strong>Use air-fryer-safe equipment. </strong>The key to producing bakery-perfect muffins or quick breads lies in making sure you’re using the right equipment. Using the right equipment helps allow the air to circulate properly, leaving your air-fried foods crisp, crunchy, and evenly cooked.</li>\n<li><strong>Set timers and reminders. </strong>We all need to set alarms to remember important things, and air frying your foods is no different. Spray the food with cooking spray, crank up the heat to 390 degrees, and cook for 12 minutes, flipping the steak and shaking the potatoes after 6 minutes.
